Fall Ingredient Highlights
Sanma (秋刀魚) - Pacific Saury
Sanma, or Pacific Saury, is considered one of the most iconic representatives of autumn in Japanese cuisine. Its very name in kanji (秋刀魚) combines the characters for "autumn," "sword," and "fish," poetically describing it as the "autumn sword fish" due to its silvery, blade-like appearance and its peak season. In the fall, Sanma has a significantly higher fat content, which makes its flavor incredibly rich and delicious. This limited window when the fish is at its absolute best is what makes it so anticipated and treasured each year.
For the Tsukimi Fall menu, featuring Sanma is a deliberate and symbolic choice. By presenting salt-cured Sanma from Hokkaido as one of the very first bites, the menu immediately establishes a connection to the season's peak bounty. This ingredient isn't just chosen for its taste, but for what it represents: the arrival of autumn and the celebration of the harvest. Its inclusion sets a contemplative tone, inviting guests to appreciate the specific, fleeting flavors that define this time of year, aligning perfectly with the restaurant's theme of gratitude.
Matsutake Mushroom (松茸)
As part of our Fall 2025 menu, we are delighted to feature the highly-prized Matsutake mushroom. This celebrated ingredient takes center stage in our third course, the Owan. Here, slices of Matsutake are gently warmed in a delicate broth made from the bones of Hamo (Japanese Pike Conger), accented with a touch of Sudachi citrus. This seasonal soup course is designed to be a pure and elegant expression of autumn's finest offerings.
The inclusion of Matsutake signifies the peak of the fall harvest, a time of gratitude and contemplation that is central to the spirit of Tsukimi. Its distinct, earthy aroma and firm texture are ephemeral, available for only a short time each year, making its appearance a special event. By presenting it in a clear, refined broth, we allow the mushroom's unique and revered character to shine, offering a quintessential taste of the season in every spoonful.
